Chocolate Energy Bites

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup dark chocolate chips
  • 1/2 cup ground flaxseed meal
  • 1/3 cup honey or maple syrup (I used honey)
  • 1 tsp vanilla extract
  • 1 tbsp cacao powder
  • 1/2 cup almond butter

Instructions:

Combine all ingredients into a bowl, add a teaspoon of coconut oil to your hands and shape mixture into balls. Store in refrigerator and enjoy!

Mexican Coleslaw

Ingredients:

  • 1/2 small red cabbage
  • 1 small bunch of radishes
  • 1 carrot, grated
  • 1 jalapeño chili
  • 1/4 red onion
  • Chopped cilantro
  • Extra virgin olive oil
  • Lime and lemon
  • Salt and Pepper

Instructions:

Mix all chopped ingredients together and season with olive oil, salt, pepper, lemon, and lime juice. Let salad sit for 30 minutes and then serve.
